Babalu Tapas & Tacos has rolled out its new fall menu with unique foods crafted by Chef T.J. Saunders, including new tacos, tapas, brunch items and more.
Guests now can enjoy new tacos such as pollo frito, which includes flash fried chicken with tomato, arugula and Cotija cheese toppings, as well as the costilla taco with braised short rib, citrus barbecue sauce and fresh cilantro.
“Our fall menu puts a flavor-filled spin on traditional favorites,” Chef Saunders said. “These items enhance the menu selection at Babalu in downtown Knoxville, and as always, we use fresh, locally sourced ingredients from East Tennessee throughout our dishes. We hope new patrons and old friends alike will come in to try to new menu because we’ve got something to please everyone’s palette.”
Additional new menu items include:
- Albondigas – Braised lamb and chorizo meatballs, citrus barbecue glaze, pico de gallo, Cotija cheese, black beans and rice
- Blackened Scottish Salmon – Blackened salmon, Shelton Farms cheese grits, smoked corn, pico de gallo, teriyaki and citrus barbecue glaze
- BABA-TINE – Babalu’s version of a classic poutine: house cut thin fries, Chihuahua cheese, Fresno peppers, green onions, braised beef short rib, jus (with juice) and a sunny-side-up egg
- Cherry Cadillac – Tito’s vodka, fresh squeezed sour mix, lime, Cheerwine and cherries
